I must have installed an acre of plastic laminate over the past 20 years. Sometimes, like in the two photos below, it’s in an existing kitchen. More often it’s as a part of cabinet installation, like the photo to the left of this text.

One challenge with laminate countertops is to install a durable, attractive backsplash. The lower right photo shows an oak backsplash, finished to match the wood self edge. While this is appealing visually, I have doubts about wood that close to water and food.

The upper photo shows a detail I have been using for a few years and prefer it to others I’ve seen. The backsplash itself is 5/8" plywood, covered with laminate, with a custom milled "L" shaped cap, stained and finished to match the self edge.
